Quark Doughnut

It's pretty hard to find an easier and more amazing doughnut, then this. As you can see in the video, you just have to mix everything in a bowl and it's ready. Less then 10 minutes. No dirty dishes, no waiting time. And the taste of this little doughnuts are frenetic.  This recipe has been added to the family recipe collection several years ago, and we love it so much, I made hundreds of time this little treats. 
I just discovered how much better is it, if I add also some raisins to it.  I know many of you do not like raisins, but when  plump raisins outside of the doughnuts are caramelizing in the hot oil, it's something fantastic. A new raisins experience, I guarantee! :) 
If you can't find quark, the recipe is working also with ricotta .

  • 250 g quark or ricotta
  •  2 tbsp confectioners sugar
  •  2 eggs beaten
  •  100 g flour
  •  6 g baking powder
  • 100 g soaked raisins
  • pinch of salt
  • vanilla sugar
  •  vegetable oil for frying

Mix all ingredients in a bowl. Using 2 teaspoons shape quenelles of the dough, then fry them in plenty of  hot oil until they're golden brown. Serve with fresh fruits, cinnamon sugar, gem or nutella.
