I love to bake for others, but my own birthday cake is an other situation. I always try to do it as simple as possible. But simple doesn't mean it isn't yummy, right?
This Greek yogurt pie becomes so good. I baked a similar cake one time,which was with simple yogurt and ricotta, I loved it as well. This kind of cakes are really similar to cheesecakes, but much lighter, and it contains less calories , but it's still creamy. As the most cheesecake, it needs some extra flavour, this yogurt pie especially requires some fruits. I chose apricot, as it's apricot season right now, plus I met a Greek blogger couple, whose made a dessert, which is fascinated me. It's just Greek yogurt, honey and walnuts. It's so simple, but it's so beautiful and so gorgeous. I adore it, can't wait to be in Athens, and try this dessert with real Greek yogurt! So Panos & Mirella inspired the further tuning of this pie, I thought that honey and walnut will make something great with my cake as well. And yes- I was right! The honey highlighted the flavor of yogurt and apricot, and walnuts and almonds added a plus texture to it.
You can make this cake under 15 minutes, after it just your oven works. It's better to cut the apricot in the last minute, and decorate the cake with them, then pour a big spoon of honey to the top of a slice of pie, and admire as the honey running down the side's of your cake.
250 g crumbled biscuit
120 g butter
1 lemon zest
800 g Greek yogurt
200 g sour cream or creme fraiche
50 g honey
80 g icing sugar
1 tablespoon vanilla extract
3 big or 4 small eggs
apricot, honey, walnut, almond
Heat the oven to 170 °C. Mix the biscuit crumbs, melted butter and the lemon zest, then press onto the bottom of a 26 cm round pan. Bake it for 10 minutes than let it cool a little bit.
Mix the yogurt, sour cream, honey, icing sugar and vanilla extract then add eggs, one at a time. Mix well!
Pour over the crust, and bake for about 40 minutes or until the center is almost set and the edge is a little brown.
Let it cool and serve with apricot, honey, walnut and almond. Enjoy!
